- 1 Whole wheat tortillas
- 220 g White fish fillet
- ½ tbsp Tahini
- 50 g Red bell pepper
- 1 tsp Aleppo pepper
- ½ Lemon
- 40 g Spinach (optional)
- 10 g Parsley (optional)
- 10 g Walnuts (optional)
Method
- Cut the white fish into four thick fingers and dust them on every side with the Aleppo pepper.
- Slacken the tahini with the juice of the lemon half until it turns from seized paste back into a pourable sauce, then cut the red pepper into thin strips, chop the parsley and crush the walnuts under the flat of a knife.
- Set a nonstick pan over medium heat with a splash of water and turn the pepper strips in it for three minutes, until they slump and the water has almost gone.
- Lay the fish fingers on top of the peppers, put the lid on and leave it four minutes. The fish steams through without being turned, which is the only way it stays in one piece.
- Lift the lid, drop the spinach into the pan around the fish and turn it through what steam is left until it collapses.
- While the spinach wilts, put the wholewheat tortilla on a second dry pan over a gentle heat for about a minute a side, until it steams faintly and gives when you bend a corner.
- Spoon half the tahini down the tortilla, lift the fish on with the peppers and spinach, top with the parsley and crushed walnuts and roll it firmly, keeping the fish in one line so it does not break apart.
- Cut it on a slant and spoon what is left of the tahini over the two cut ends.
