Seared Tuna and Avocado Wrap

- 1 Whole wheat tortillas
- 175 g Tuna
- ½ Lime
- 40 g Avocado (optional)
- 30 g Arugula (optional)
- 60 g Cucumber (optional)
- ½ tsp Black pepper (optional)
Method
- Crack the black pepper coarsely and roll the tuna in it, pressing so it holds on every face.
- Crush the avocado with the juice of the half lime and leave it lumpy — a smooth purée slides straight back out of a wrap. Shave the cucumber into ribbons and pick over the rocket.
- Heat a heavy dry pan until it is almost smoking and sear the tuna forty seconds a side, no more: you want a cooked grey band no thicker than a pencil line around a raw centre.
- Move the fish to a board and let it settle for two minutes, then cut it across into finger-thick slices.
- As the tuna sits, pass the tortilla over a low dry pan for thirty seconds a side — long enough to soften it, short enough that it does not dry out and go brittle.
- Smear the crushed avocado across the warm tortilla, scatter the rocket and cucumber ribbons over it, fan the tuna down the centre and roll the whole thing up firmly.
- Cut it once through the middle so the pink centre of the fish shows at the ends, and eat it straight away.
