  • 22 g Brown rice
  • 180 g White fish fillet
  • 180 g Spinach
  • 12 g Ginger
  • 2 tsp Soy sauce
  • 1 tsp Toasted sesame oil
  • 60 g Snow peas (optional)
  • 60 g Edamame (optional)
  • 1 tsp Rice vinegar (optional)
  • 2 g Nori sheets (optional)

Method

  1. Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: cut the ginger into fine matchsticks and scatter half of them over a heatproof plate. Lay the fish on top and season it.
  3. While the rice cooks: wash the spinach and string the snow peas.
  4. Set the plate of fish over an inch of simmering water, cover, and steam for 8 minutes, until the fish turns opaque and flakes at a gentle push.
  5. Add the spinach, snow peas and edamame to the steamer beside the fish and cover for 1 minute more, just until the spinach collapses and the peas turn bright.
  6. Warm the sesame oil with the remaining ginger matchsticks for 30 seconds until it sizzles, then stir in the soy sauce and rice vinegar off the heat.
  7. Mound the brown rice in a shallow bowl, slide the fish and greens on top with any steaming juices, and pour the hot ginger oil over the fish. Finish with torn nori.
