- 1 Whole wheat tortillas
- 250 g Chicken breast
- 70 g Brown rice
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- ½ Lime
- 1 tsp Olive oil
- 90 g Black beans (optional)
- 100 g Tomato (optional)
- 1 Jalapeno (optional)
- 10 g Cilantro (optional)
Method
- Rinse the brown rice until the water runs clear, then simmer it covered in twice its volume of water for twenty-five minutes, until the grains are tender and the pan has gone dry.
- With the rice on, cut the chicken into broad strips and coat every side in the smoked paprika and cumin.
- Still with time in hand, chop the tomato and the jalapeño fine, tear in the coriander and sharpen the lot with the juice of the half lime. That is the salsa — nothing gets cooked.
- Heat the olive oil in a heavy pan until it just begins to smoke, then cook the chicken for seven minutes, turning once, until the spice crust has gone dark and the meat is firm.
- Tip the drained black beans in alongside the chicken for the last minute, just long enough to heat them through and let them take up the paprika left in the pan.
- With the chicken nearly done, hold the tortilla over a low dry pan for a minute a side — a wholewheat wrap carrying this much has to be supple or it tears on the first fold.
- Spoon the rice in a band down the middle of the warm tortilla, leaving a clear border, then add the chicken, the beans and half the salsa. Bring both ends over the filling and roll it into a tight cylinder.
- Halve it and spoon the rest of the salsa over the open ends.
