- 90 g Soba noodles (buckwheat)
- 120 g Salmon fillet
- 120 g Daikon radish
- 1 tbsp Japanese soy sauce (koikuchi shoyu)
- 1 tsp Mirin
- 1 tbsp Rice vinegar
- 1 Scallions (optional)
- 4 leaves Shiso (perilla) leaves (optional)
- 1 tsp Sesame seeds (optional)
Method
- Salt the salmon on both faces and leave it. Grate the daikon on the coarse side of the grater and let it drain in a sieve, slice the scallion into thin rings, and stack and shred the shiso.
- Bring a deep pot of unsalted water to a rolling boil and cook the soba until a strand snaps cleanly with no chalky core.
- Tip the soba into a colander and rinse it under cold running water, rubbing the strands between your palms until they squeak, then hold them in iced water.
- Whisk the soy, mirin and rice vinegar together into a thin dressing and keep it cold.
- Grill the salted salmon under a high heat, skin up, until the flesh turns from glassy to matt and splits into flakes when you press it.
- Shake the soba dry and coil it into a wide shallow bowl. Squeeze the last water from the daikon and mound it over the noodles, then break the hot salmon across the top in big flakes and pour the dressing round the rim.
- Scatter the shiso and scallion and eat it at once, dragging each mouthful through the daikon before the salmon cools.
