- 80 g Soba noodles (buckwheat)
- 170 g Salmon fillet
- 120 g Spinach
- 10 g Ginger
- 1 tsp Toasted sesame oil
- 2 tsp Japanese soy sauce (koikuchi shoyu) (optional)
- 1 tsp Mirin (optional)
- 15 g Scallions (optional)
- 5 g Sesame seeds (optional)
Method
- Pat the salmon dry on both faces and grate the ginger. Slice the spring onions on a long angle and keep the green tips back for the end.
- Lay the salmon skin-down in the sesame oil over a medium flame and leave it six minutes without moving it, until the flesh has turned opaque two thirds of the way up the side.
- Turn the fillet, give it ninety seconds on the flesh side, then lift it onto a plate. Drop the ginger into the pan off the heat with the soy and mirin, and swirl until it loosens the browned bits.
- Put the spinach into the warm pan and turn it over twice — the pan's own heat is enough, and a burner under it would drive out water and stew the leaves.
- While the salmon rests, boil the soba in a wide pan of unsalted water for four minutes, then drain and rinse it briefly under cold water to take off the surface starch.
- Turn the drained soba through the pan with the spinach and its juices, flake the salmon over in big pieces, and finish with the green scallion tips and the sesame seeds.
