- 300 g Puy lentils
- 3 Tomato
- 1 Onion
- 2 Carrot
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- 1 tsp Ground cumin
- 1 l Vegetable stock
- ½ tsp Salt
- 1 Lime
- 3 tbsp Cilantro (optional)
Method
- Dice the onion and carrot, mince the garlic, and chop the tomatoes.
- Soften the onion, carrot, and garlic in the oil with the cumin until fragrant.
- Add the lentils, tomato, stock, and salt, bring to a boil, then simmer until the lentils are tender, about 25 minutes.
- Squeeze in the lime, adjust with a little water if thick, and finish with cilantro.
