Split Pea Soup

Ingredients
- 300 g Lentils / dal
- 1 Onion
- 2 Carrot
- 2 cloves Garlic
- 1200 ml Vegetable stock
- 2 tbsp Extra-virgin olive oil
- 1 tsp Salt
- 2 stalks Celery (optional)
- 1 tsp Smoked paprika (optional)
Method
- Dice the onion, carrot, and celery; mince the garlic.
- Soften the vegetables in the oil over medium heat until the onion is translucent, about 6 minutes.
- Stir in the paprika for 30 seconds, then add the split peas, stock, and salt and bring to a boil.
- Simmer gently, partly covered, until the peas collapse into a thick soup, about 35 minutes.
- Season to taste and serve hot.
