  • 3 Corn tortillas
  • 180 g White fish fillet
  • 20 g Ginger
  • 2 tsp Garlic-infused olive oil
  • 1 tsp Soy sauce
  • 90 g Daikon radish (optional)
  • 15 g Cilantro (optional)
  • 1 tsp Rice vinegar (optional)
  • ¼ tsp White pepper (optional)

Method

  1. Cut the greater part of the ginger into hair-fine shreds and spread them over a heatproof plate as a bed for the fish to sit on.
  2. Cut the daikon into matchsticks, turn them through the rice vinegar and leave them to sharpen, and pick the coriander into sprigs.
  3. Sit the fish on the bed of ginger, set the plate over an inch of boiling water, cover it and give it nine minutes — a fork should go through the thickest part with no resistance at all.
  4. While the fish is in the steam, warm the three corn tortillas in a dry pan and stack them under a folded cloth as they come off.
  5. Shred the last knob of ginger into a small bowl. This is the handful the hot oil goes onto, and it has to stay raw until the moment it does.
  6. Spoon the soy and white pepper over the hot fillet, then take the garlic-infused oil to the point where it ripples and pour it onto the raw ginger so it spits across the fish.
  7. Take the whole plate to the table and break flakes of fish straight into a tortilla, with the vinegared daikon and a sprig of coriander on each.
