- 60 g All-purpose flour
- 130 g Salmon fillet
- 60 g Daikon radish
- 4 leaves Shiso (perilla) leaves
- 12 g Ginger
- 1 tsp Light soy sauce
- ½ tsp Toasted sesame oil (optional)
- 1 tsp Rice vinegar (optional)
Method
- Pour just-boiled water into the flour and stir it to a shaggy mass, knead it smooth, then cover it and leave it to slacken. Boiling water kills the gluten's spring, which is what lets a steamed wrapper stay tender instead of chewy.
- While the dough sits, grate the daikon and squeeze it dry in your hand, grate the ginger and shred the shiso.
- Skin the salmon and chop it to a rough dice — not a paste, you want pieces you can feel — then fold it through the daikon, ginger, shiso, soy and sesame oil.
- Roll the dough into thin discs with a thicker middle, sit a spoon of filling on each and pleat the edge shut, keeping the finished ones under a damp cloth so the rims do not dry and split.
- Line the steamer, space the dumplings so they cannot touch and steam them covered over a hard boil until the wrappers turn translucent and the salmon has gone opaque at the pleat.
- Lift them straight into a bowl and put out the rice vinegar to dip.
