  • 3 cloves Garlic
  • 2 Scallions
  • 1 tbsp Light soy sauce
  • 1 tbsp Rice vinegar
  • 2 tbsp Neutral oil
  • ½ tsp Sugar

Method

  1. Peel and thinly slice the lotus root, then soak the slices in cold water to keep them crisp and pale.
  2. Mince the garlic and thinly slice the scallions.
  3. Heat the neutral oil in a wok over high heat. Stir-fry the garlic until fragrant, then add the drained lotus root and stir-fry until crisp-tender.
