Ingredients

  • 250 g Chicken breast
  • 100 g Bulgur
  • 15 g Parsley
  • 8 g Mint
  • ½ tsp Sumac
  • 1 tbsp Extra-virgin olive oil
  • ½ Lemon
  • 100 g Cherry tomatoes (optional)

Method

  1. Pour just-boiled water over the bulgur to cover it by a finger, put a plate on top and leave it fifteen minutes. Bulgur is parboiled already, so it soaks rather than cooks — boiled hard it goes to porridge.
  2. Open the chicken breast out flat so it cooks at one thickness and rub it with the sumac and salt.
  3. Chop the parsley and mint finely and quarter the tomatoes. Whisk the olive oil into the lemon juice.
  4. Get a ridged pan hot and dry and cook the flattened breast six minutes on the first side and four on the second, until it carries dark bars and springs back under a finger.
  5. Rest the chicken five minutes, then tear it along the grain into thick strips.
  6. Fluff the soaked bulgur with a fork, squeezing out any water that has not been taken up, then fold in the herbs, tomatoes and dressing.
  7. Pile the tabbouleh onto the plate and lay the torn chicken over it with the board juices.
