  • 22 g Basmati rice
  • 160 g Chicken breast
  • 40 g Yogurt
  • 1 tsp Garam masala
  • ½ Lemon
  • 150 g Spinach (optional)
  • 100 g Cucumber (optional)
  • 100 g Tomato (optional)
  • 10 g Ginger (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the basmati until the water runs clear, then cook it in twice its volume of salted water, covered, until tender and the water is absorbed, about 12 minutes.
  2. Cut the chicken into thick strips. Grate the ginger into the yoghurt with the garam masala and salt, and turn the chicken through it. Leave it to sit for 10 minutes.
  3. Dice the cucumber and tomato and dress them with half the lemon juice. Wash the spinach and chop the coriander.
  4. Get a dry heavy pan very hot and lay the marinated chicken in. Cook 5 minutes without moving it so the yoghurt blackens in patches, then turn and cook 3 minutes more until firm.
  5. Add the spinach to the hot pan and turn it through the charred bits for a minute until it collapses.
  6. Spoon the basmati onto a plate, lay the charred chicken and spinach over it, and pile the dressed cucumber and tomato alongside with all their juices. Scatter the coriander and squeeze over the rest of the lemon.
