Ingredients

  • 1 Low-carb tortillas
  • 200 g Chicken breast
  • 80 g Cucumber
  • 6 g Mint
  • 1½ tsp Sumac
  • 1 tsp Garlic-infused olive oil
  • ¼ Lemon
  • 0.2 tsp Salt
  • 25 g Greek yogurt (optional)
  • 45 g Romaine lettuce (optional)
  • 6 g Parsley (optional)

Method

  1. Cut the chicken breast into finger-width strips and turn them through the sumac, the salt and the juice of the lemon quarter until every piece is coated.
  2. Leave the strips in the bowl for ten minutes. That is how long the sumac needs to bleed into the surface and stain it deep red rather than sit on top as powder.
  3. Beat the Greek yoghurt with the chopped mint and parsley until it slackens into a spoonable sauce.
  4. Cut the cucumber into short batons and shred the romaine into ribbons about a finger wide.
  5. Slick a frying pan with the garlic-infused oil over a medium flame and cook the chicken strips for eight minutes, turning them once halfway, until the sumac has caught in dark patches and the meat is opaque all through.
  6. While the chicken is in the pan, lay the low-carb tortilla in a second dry pan on the lowest flame for a minute a side. It only needs to lose its stiffness; longer than that dries it out.
  7. Streak the herb yoghurt across the middle of the warm tortilla, scatter the romaine and cucumber over it, lay the hot chicken along the top and roll the whole thing away from you with the sides tucked in.
  8. Slice it across the middle and eat straight away, while the chicken is still hot enough to loosen the yoghurt.
