Ingredients

  • 22 g Brown rice
  • 150 g Chicken breast
  • 120 g Tomato
  • 15 g Chipotles in adobo
  • 1 Lime
  • ½ tsp Olive oil
  • 120 g Zucchini (optional)
  • 100 g Spinach (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: chop the chipotles finely and mash them with the grated tomato. Cut the courgette into half-moons.
  3. While the rice cooks: wash the spinach and chop the coriander.
  4. Warm the olive oil in a pan over medium-high and brown the chicken breast whole for 4 minutes a side, then pour in a splash of water, cover and cook 5 minutes more until cooked through. Lift it onto a board.
  5. Add the chipotle-tomato mash and the courgette to the pan and cook 6 minutes, until the sauce darkens and thickens around the courgette.
  6. Shred the chicken with two forks and return it to the sauce with the spinach, turning until the spinach collapses and the chicken has taken up the colour. Squeeze in half the lime off the heat.
  7. Spoon the brown rice into a shallow bowl as a base and pile the tinga over it with all its sauce. Scatter the coriander and serve the remaining lime in wedges.
