Ingredients

  • 600 g Firm tofu
  • 200 g Black beans
  • 200 g Romaine lettuce
  • 1 Chipotles in adobo
  • 2 Tomato
  • 2 cloves Garlic
  • 1 tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 1 Avocado (optional)
  • 1 Lime (optional)

Method

  1. Blitz the tomato, chipotle, garlic, and cumin to a sauce.
  2. Press and crumble the tofu, then fry in the oil over high heat until the edges catch, 5 minutes.
  3. Pour the sauce and salt over the tofu and simmer until thick and glazed, 6 minutes.
  4. Warm the beans and shred the lettuce.
  5. Build bowls of lettuce, beans, and sofritas tofu; top with avocado and lime.
