- 600 g Firm tofu
- 200 g Black beans
- 200 g Romaine lettuce
- 1 Chipotles in adobo
- 2 Tomato
- 2 cloves Garlic
- 1 tsp Ground cumin
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 1 Avocado (optional)
- 1 Lime (optional)
Method
- Blitz the tomato, chipotle, garlic, and cumin to a sauce.
- Press and crumble the tofu, then fry in the oil over high heat until the edges catch, 5 minutes.
- Pour the sauce and salt over the tofu and simmer until thick and glazed, 6 minutes.
- Warm the beans and shred the lettuce.
- Build bowls of lettuce, beans, and sofritas tofu; top with avocado and lime.
