Ingredients

  • 500 g Tuna
  • 400 g Cannellini beans
  • 2 cloves Garlic
  • 1 Lemon
  • 3 tbsp Extra-virgin olive oil
  • 0.4 tsp Salt
  • 4 Sage (optional)
  • 80 g Arugula (optional)

Method

  1. Warm the oil with the sliced garlic and sage until fragrant, then stir in the drained beans and salt to heat through.
  2. Sear the tuna in a very hot dry pan, 1–2 minutes a side, leaving it pink in the middle.
  3. Crush a few beans to thicken, squeeze in half the lemon, and fold through the arugula to wilt.
  4. Slice the tuna and lay it over the beans; finish with the rest of the lemon.
