Ingredients

  • 110 g Brown rice
  • 200 g Tinned tuna
  • 1 Lemon
  • 2 tsp Olive oil
  • 120 g Cannellini beans (optional)
  • 100 g Tomato (optional)
  • 80 g Cucumber (optional)
  • 20 g Kalamata olives (optional)
  • 8 g Dill (optional)
  • 8 g Parsley (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: drain the tuna and the white beans, and rinse the beans well.
  3. While the rice cooks: dice the tomato and cucumber, stone and halve the olives, and chop the dill and parsley.
  4. Whisk the olive oil with the juice of the lemon and a good grind of pepper to make the dressing.
  5. Fork the hot brown rice into a wide bowl with the white beans so the beans warm through in it. Break the tuna over in large flakes, add the tomato, cucumber and olives, and pour over the lemon dressing. Scatter the dill and parsley and turn everything once, gently, so the tuna stays in pieces.
