- 100 g Brown rice
- 250 g Chicken breast
- 10 g Ginger
- 1 tbsp Soy sauce
- 1 tsp Toasted sesame oil
- 100 g Spinach (optional)
- 80 g Edamame (optional)
- 1 tsp Rice vinegar (optional)
- 15 g Scallions (optional)
- 1 tsp Sesame seeds (optional)
Method
- Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 28 minutes.
- While the rice cooks: butterfly the chicken breast so it is an even thickness throughout, pat it dry and season it. Grate the ginger.
- While the rice cooks: wash the spinach and slice the scallions thinly on the diagonal.
- Heat the sesame oil in a heavy pan over medium-high and brown the chicken for 5 minutes on the first side, until it lifts cleanly from the pan.
- Turn the chicken, add the grated ginger alongside it, and cook 4 minutes more until the breast is firm and cooked through. Lift it to a board to rest.
- Tip the spinach and edamame into the hot pan with the soy sauce and rice vinegar and toss for 1 minute, scraping up the browned chicken juices as the spinach wilts into them.
- Fluff the brown rice into a deep bowl. Slice the rested chicken across the grain, lay it over the rice with the glazed greens, and finish with the scallions and sesame seeds.
