Ingredients

  • 20 g Brown rice
  • 160 g Chicken breast
  • 150 g Spinach
  • 12 g Ginger
  • 2 tsp Soy sauce
  • 1 tsp Toasted sesame oil
  • 60 g Snow peas (optional)
  • 1 tsp Rice vinegar (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: cut the chicken breast into thick strips, pat them dry and season. Grate the ginger.
  3. While the rice cooks: string the snow peas and wash the spinach.
  4. Heat the sesame oil in a wide pan over high and cook the chicken strips hard for 5 minutes without moving them much, until browned on the outside and just firm through.
  5. Add the grated ginger and snow peas and toss for 1 minute, then add the spinach and turn it through until it collapses.
  6. Off the heat, add the soy sauce and rice vinegar and swirl the pan so everything picks up the glaze.
  7. Spoon the brown rice into a bowl as a small base and pile the ginger chicken and greens over it with all the pan juices. Finish with sesame seeds.
