- 1 Eggplant
- 2 Bell pepper
- 400 g Canned tomatoes
- 3 cloves Garlic
- 5 tbsp Olive oil
- ½ tsp Salt
- 1 Zucchini (optional)
Method
- Slice the potato, eggplant, pepper, and zucchini into rounds.
- Shallow-fry each vegetable in olive oil in batches until just soft, draining on paper.
- Simmer the tomatoes with the garlic and salt into a thick sauce, 12 minutes.
- Layer the vegetables in a dish, pour the sauce over, and bake at 180°C to set, 20 minutes.
- Rest briefly and serve.
