  • 3 Potatoes
  • 1 Eggplant
  • 2 Bell pepper
  • 400 g Canned tomatoes
  • 3 cloves Garlic
  • 5 tbsp Olive oil
  • ½ tsp Salt
  • 1 Zucchini (optional)

Method

  1. Slice the potato, eggplant, pepper, and zucchini into rounds.
  2. Shallow-fry each vegetable in olive oil in batches until just soft, draining on paper.
  3. Simmer the tomatoes with the garlic and salt into a thick sauce, 12 minutes.
  4. Layer the vegetables in a dish, pour the sauce over, and bake at 180°C to set, 20 minutes.
  5. Rest briefly and serve.
