Ingredients

  • 10 Dumpling wrappers
  • 150 g Tuna
  • 0.4 Japanese leek (negi)
  • 8 g Ginger
  • 1 tsp Light soy sauce
  • 2 tsp Toasted sesame oil
  • 1 tsp Chili oil
  • 1 tbsp Neutral oil
  • 25 g Firm tofu (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Slice the negi into fine rings, grate the ginger and crumble the tofu.
  2. Chop the tuna to a coarse dice with a heavy knife and fold it through the negi, ginger and tofu with the soy and half the sesame oil. Keep the pieces distinct — worked to a paste the fish goes chalky in the pan.
  3. Fill each wrapper, wet the rim and pleat it closed down one side, standing them pleat-up on a tray.
  4. Heat the neutral oil in a heavy skillet over medium-high and set the gyoza in flat-side down. Cook them dry, with no water and no lid: raw tuna needs seconds rather than steam, and a splash of water here would only slacken the wrappers.
  5. Tip them onto their sides and roll them through the pan until the wrappers everywhere have gone translucent and blistered.
  6. Slide them out browned side up, spoon over the chilli oil and the rest of the sesame oil and scatter the sesame seeds.
