  • 180 g Lupin pasta
  • 2 tin Tinned tuna
  • 190 g Arugula
  • 300 g Cherry tomatoes
  • 2 tbsp Extra-virgin olive oil
  • 1 Lemon
  • 1 tsp Salt
  • ½ tsp Red pepper flakes (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a large pot of well-salted water to a boil.
  2. While the water heats, halve the cherry tomatoes and drain the tuna. Whisk the olive oil with the juice of the lemon and the chili flakes in a large bowl.
  3. Cook the lupin pasta 5 minutes — one minute shy of the pack's 6. It softens fast, so drain it early rather than late.
  4. Reserve a splash of pasta water, then drain.
  5. Toss the warm lupin pasta into the dressing with the tomatoes and tuna, loosening with a splash of pasta water, then fold through the rocket so it just wilts.
  6. Add black pepper and serve.
