- 1 Eggplant
- 2 Zucchini
- 2 Bell pepper
- 200 g Green beans
- 3 Tomato
- 1 Onion
- 4 cloves Garlic
- 6 tbsp Olive oil
- ½ tsp Salt
- 2 Potatoes (optional)
- 15 g Parsley (optional)
Method
- Cut all the vegetables into rough chunks and spread in a roasting tray with the garlic.
- Grate the tomatoes over the top, pour on the olive oil, add the salt, and toss.
- Roast at 190°C, stirring once, until soft and caramelized, 55 minutes.
- Scatter with parsley and serve warm or at room temperature.
