- 2 Bell pepper
- ½ Cauliflower
- 2 Carrot
- 1 Onion
- 2 Tomato
- 1 Ginger
- 1 tsp Cumin seeds
- 1 tsp Garam masala
- ½ tsp Ground turmeric
- 3 tbsp Neutral oil
- 1 tsp Salt
Method
- Slice the onion and grate or finely mince the ginger.
- Heat the oil over medium heat and add the cumin seeds; once they sizzle and turn fragrant, add the onion and ginger and fry until softened, then stir in the turmeric and cook about 30 seconds until fragrant.
- While the aromatics fry, cut the cauliflower into small bite-size florets.
- While the aromatics fry, cut the carrot and bell pepper into bite-size pieces.
- While the aromatics fry, cut the tomato into wedges.
- Add the cauliflower, carrot, bell pepper, and tomato with the salt and stir-fry over medium-high heat until the vegetables are tender but still have a little bite, about 10 minutes.
- Take the pan off the heat and stir through the garam masala.
- Serve with roti.
