About Vegetable Pakora
Vegetable Pakora is the classic Indian fritter: clusters of mixed vegetables bound in a spiced chickpea-flour batter and deep-fried until crisp. Known across the subcontinent as monsoon and teatime food, pakoras rely on besan, which fries up shatteringly crunchy and carries a nutty, savory flavor all its own. This version keeps the batter thick enough to cling to thinly sliced onion and potato with chopped spinach and chili folded through, seasoned with cumin and red chili powder. The key is a thick, barely-wet batter and hot oil so the clusters crisp fast without turning greasy.
Bitten into, a good pakora is crunchy outside and tender within, the sweetness of onion and softness of potato set against the heat of chili and the toasty gram flour. They are meant to be eaten hot and fresh, straight from draining, when the crust is at its best. Serve them with mint or tamarind chutney as a snack, an appetizer, or alongside a cup of chai on a cold or rainy day. Fried in batches in about twenty-five minutes, they are best made just before you plan to eat.
