Veloute de Fenouil a l'Aneth
Fennel sweated pale in olive oil, simmered with root vegetables and blitzed smooth, sharpened with dill.

Ingredients
- 120 g Fennel bulb
- 120 g Carrot
- 70 g Potatoes
- 20 ml Olive oil
- 250 ml Chicken stock
- 8 g Dill
- ¼ Lemon (optional)
- ⅛ tsp Salt (optional)
- ¼ tsp Black pepper (optional)
Method
- Trim the fennel and slice it thin, keeping the feathery tops aside, then peel the carrot and potato and cut both into small dice.
- Sweat the fennel in the olive oil over the lowest flame until it turns floppy and sweet without taking any colour at all.
- Add the carrot and potato, pour the stock over and season with the salt and pepper.
- Simmer half covered until a piece of potato collapses when you press it against the side of the pot.
- While the pot simmers, chop the dill fine and cut the lemon into a wedge.
- Blend the soup until no thread of fennel is left and it pours in one smooth ribbon off the spoon.
- Off the heat, stir most of the dill through and wake it up with a squeeze of lemon.
- Pour it into a warmed bowl and finish with the reserved fennel tops and the last of the dill.
