- 2 Corn tortillas
- 220 g Shrimp
- 70 g Snow peas
- 12 g Ginger
- 1 tsp Garlic-infused olive oil
- 1 tsp Soy sauce
- 1 Egg white (optional)
- 1 tsp Cornstarch (optional)
- 30 g Carrot (optional)
- 1 tsp Rice vinegar (optional)
- ¼ tsp White pepper (optional)
Method
- Work the peeled prawns with the egg white, the cornflour and the white pepper until they look cloudy and feel slippery, then leave them to take it on while you cut the vegetables.
- String the snow peas by snapping the stalk end and pulling it down the seam, slice the carrot into thin coins and shred the ginger as fine as you can get it.
- Warm the garlic-infused oil in a wide nonstick pan for a minute, slide the prawns in and keep them moving for two minutes until the coating goes from cloudy to white, then give the snow peas, carrot and ginger two minutes alongside them.
- While the prawns and snow peas are still moving in the pan, toast the corn tortillas one at a time on a second dry pan until they are freckled and flexible.
- Off the heat, splash in the soy and rice vinegar and swirl the pan — the starch on the prawns will pull the little liquid there is into a gloss.
- Set the pan and the two tortillas down together and fill each one as you go, a couple of spoonfuls at a time so nothing sits and steams.
