Ingredients

  • 22 g Brown rice
  • 180 g Chicken breast
  • 150 g Green beans
  • 2 tsp Za'atar
  • 1 tsp Olive oil
  • ½ Lemon
  • 80 g Tomato (optional)
  • 10 g Parsley (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: cut the chicken into thick strips and press the za'atar onto them with a little salt.
  3. While the rice cooks: top and tail the green beans, chop the tomato, and chop the parsley.
  4. Warm half the olive oil in a pan over medium and stew the green beans with the tomato and a splash of water for 12 minutes, until soft right through.
  5. Heat the rest of the oil in a second pan over medium-high and cook the za'atar chicken 6 minutes, turning once, until the crust has toasted and the chicken is firm.
  6. Off the heat, squeeze the lemon into the chicken pan and swirl it through the toasted za'atar oil.
  7. Spoon the brown rice onto a plate, add the tomato beans and lay the chicken over with the lemony za'atar oil poured on top. Scatter the parsley.
