  • 1 Whole wheat tortillas
  • 185 g Chicken breast
  • 1 tbsp Za'atar
  • ¼ tbsp Tahini
  • 50 g Romaine lettuce
  • ¼ Lemon
  • 60 g Cucumber (optional)

Method

  1. Flatten the chicken breast under your palm to an even thickness and press the za'atar into both faces so it forms a crust rather than a dusting.
  2. Thin the tahini with the juice of the lemon quarter and a little cold water, shred the romaine finely and cut the cucumber into half-moons.
  3. Cook the chicken in a dry nonstick pan over medium heat for five minutes a side; the za'atar toasts as it goes and smells of thyme and sesame by the time the meat is done.
  4. Move it to a board and let it sit two minutes before slicing, or the crust sheds the moment the knife goes in.
  5. As the chicken rests, run the wholewheat tortilla through the pan it came out of over a low flame, a minute a side, picking up the toasted seeds left behind.
  6. Slice the chicken across into thick strips, spread the tahini over the tortilla, bed the romaine and cucumber down first and lay the chicken over them before rolling it up snugly.
  7. Cut it once and eat it, dipping the open ends into whatever tahini is left in the bowl.
